Bacon Crepe Rolls
These are so easy to make and so yummy! Really you can take any topping combination and make these fabulous. I created this recipe with bacon and it was amazing!
Bacon Crepe Rolls
8 crepes
1 pkg cream cheese
2 cups crumbled bacon
1 cup sliced green onions
1/2 tsp garlic powder
Crepes
1 cupall-purpose flour
2eggs
1/2 cupmilk
1/2 cupwater
1/4 teaspoonsalt
2 tablespoonsbutter, melted
In a large
mixing bowl, whisk together the flour and the eggs. Gradually add in the
milk and water, stirring to combine. Add the salt and butter; beat
until smooth. Heat a
lightly oiled griddle or frying pan over medium high heat. Pour or scoop
the batter onto the griddle, using approximately 1/4 cup for each
crepe. Tilt the pan with a circular motion so that the batter coats the
surface evenly. Cook the
crepe for about 2 minutes, until the bottom is light brown. Loosen with a
spatula, turn and cook the other side. Mix cream cheese and garlic together. Spread 2 Tbsp onto each crepe. Sprinkle bacon and green onions over the top. Roll up into a burrito. Cut into one inch slices. Serve while warm.
