This is a great alternative to mashed potatoes. In fact, my husband didn't even know it was cauliflower until he finished eating them. He thought they were potatoes.
Parmesan Mashed Cauliflower
- 1 head of cauliflower
- 2 Tbsp butter
- 1 cup shredded Parmesan
- 1/2 cup sour cream
- 1/4 tsp garlic powder
- pinch of salt
- fresh ground pepper
- parsley
- 1/2 cup diced green onions
